Fenugreek (Trigonella foenum-graecum) and its seeds are among the oldest cultivated plants. Traces of fenugreek seeds have been found in the tomb of Pharaoh Tutankhamun. Fenugreek seeds contain a large number of secondary plant compounds, including saponins and flavonoids such as quercetin, apigenin, and luteolin, which have a high antioxidant potential.
